The canals are the actual city plan — seeing them from the water is genuinely revealing on a first visit. The mistake is picking the 100-seat glass-roof boats near Centraal Station; they follow the same route as the small operators but with an audio guide and no atmosphere. Small operators (Those Dam Boat Guys, Boaty, Rederij Kooij) run electric or classic wooden boats with 8–12 people; evening cruises with wine and Dutch cheese are the sweet spot. Book direct on the operator's site; ticket resellers markup 20–40%.
